It’s thru a mechanism called “phototropism,” which describes a plant cell’s genetic response to the presence or absence of light.

Ooh this is a fun one.

So, some plant cells have an object inside them called an amyloplast, which is basically a bubble filled up with starch grains. These are denser than the surrounding liquid, so they move in whatever direction gravity is pulling them in. This gathers the amyloplasts at the bottom of cells, so the plant can know which way is up by looking at where the amyloplasts are gathered.
