The organ is not in direct contact with the ice so there is no risk of ice burn or water contamination. And there is no risk of freezing.

It’s cold not frozen. You keep organs cold to slow down any bacterial growth that could happen and to slow down cell death so that it’s still a usable organ.

If it were frozen it would be ruined.

It’s not frozen like a steak lol, they are just keeping it cool enough to stop organ from decaying and bacteria from growing.
