eli5: How is it that certain surgeries can take several hours?

I understand that certain surgeries can be very technical and require a lot of skill and even a couple of hours, but I don’t understand what would make a surgery last upwards of 5 hours. That seems like a lot of time for cutting someone open and fixing them up.

The more complex the surgery the longer it takes.

Sewing blood vessels, repairs, transplants, screwing pins into bones, it’s all delicate and precise work.

Cutting open a human in a hurry would be like butchering a cow. If it’s already dead it doesn’t matter, but for something alive you would casue a lot of unnecessary damage and probable death.
