I’ve eaten at least 4 raw eggs a day for the last 3 years (obviously not every single day, but most) and have never had an issue

It isn’t, that’s why pregnant women are not supposed to eat eggs with runny yolks. It has to be scrambled, a fully cooked omelet or hard boiled. Partial cooking reduces the risk but doesnt eliminate it.

Also, not everyone gets sick from eating contaminated food. Somebody in my family has an impaired immune system and has to take greater care with food.

I have eaten (and still do), 6 raw eggs every morning for about 20 years. Great nutrition and never got sick because of it. (Belgium, store bought and from my own chickens)

Either way, raw egg yoke and tartar are well worth rhe risk of salmonella and or parasites.

How do chickens catch salmonella in the first place? Can’t they eliminate that vector that infects the chickens in the first place?

Fresh raw eggs are pretty safe to eat, and I eat them fairly often.

But also, hardening of the yolk and the killing of bacteria are seperate processes. They are both processed caused by the denaturing of proteins at high temperatures, but they don’t impact one another at all.

I know this is purely anecdotal and that there IS some risk of salmonella when eating raw eggs, but I have been eating raw and undercooked eggs (USA) my entire life and have never had an issue or gotten sick.

The inside of the egg is sterile. The only risk is if you don’t wash the outside. Raw egg is not innately more risky than cooked eggs, but handling eggs and then eating immediately after without washing you hands risks the outside contamination getting to the inside
