By adding neutral density filters or lighting at lower levels you can force the iris open reducing the depth of field. Most video cameras have nd filters built in. You can also dial in electronic shutters to reduce the available light also requiring the iris to open. This can add other complications. In film cameras you are stuck with ND filters.
