The sensor is a large chip with elements that are sensitive to light. When light hits a sensor it builds up an electric charge, the more light, the more charge. These charges are read by the chip when the shutter is hit.

To get color, the chips pixels are alternately covered by colored filters that only let in light from certain frequencies. These individual colors are then combined to form the color image.
