eli5! In France there are over 1000 different types of cheeses. Does each different type of cheese have different strains of live cultures/ probiotics?

Not entirely, the type of milk used, processing method, aging, etc are all involved as well. You might use the same culture for two different cheeses where one is aged longer, or one has pasteurized milk and the other is non pasteurized, etc. Even keeping everything the same except for using milk from a grass fed cow vs a grain fed cow will make two different types of cheese.
