lack of saliva leads to more friction. so less saliva means more friction that causes pain.

All I could think of is that it’s because mouth becomes dry (as bread absorbs all the saliva). Difficult for dry things to pass through esophagus. I guess that’s why.

I agree with other people saying friction, but I also think there’s an element of just swallowing something too large, which doesn’t feel great.
