The process of sleeping has a few levels. One of them is releasing this chemical that stops your body from moving, then the next one is rem sleep which arranges and rearranges memories around in your brain basically deciding whats more useful to remember. This rem process is chaotic to the brain and without the other process that stops you from moving, you could end up hurting yourself or others.

I don’t think there’s a way to prevent it. Sometimes you just wake up and the paralysis chemical hasn’t wore off yet so all you can do is wait.

Fun fact, there are some functions you can still control such as your breathing. So next time it happens, just take a few deep breaths and wait for it to pass.
