After a while, corpses lose all the gasses inside. The abdomen in particular reduces. This is later followed by distention due to the production of new gasses during decomposition.
There is an effect called hypostasis where the blood extravases, and settles with gravity at the lower extremities, but I don’t think it affects the shape too much, but it does create a very obvious colour change in a cadaver which has been lying for many hours. It’s also called post-mortem staining.
Because living things that stop living will decompose thanks to Maggots and all sorts of things. Try cutting one open

Edit: Also the first step of decomposition is the autolysis, the breakdown of cells by enzymes that are already in those cells without any maggots or fungi(¿) /fungus. You could say the cells ‘eat’ themselves.
I don’t know if thats correct english, but I tried my best translating it as understandable as I could.
When a person is alive and lies on a floor, they dont go flat because even laying on a floor, many muscles in their body are still working to maintain the bodies shape.
But in a dead body, the muscles undergo relaxation because, you know cause it is dead and the muscles wont have any energy to hold up the shape. That is when gravity comes into play and pulls it down, making it go flat with the floor.
