[ELI5] Why do animals jerk around when they’re killed straight right through the brain?

This is based on a [ratting video](https://youtu.be/WebEX6iUmJ8) I just recently watched. Even though the rats instantly die, their bodies will still move. Randomly kicking, trying to run, jittering, and whatnot. What exactly is the science behind all of this? I believe this has something to do with their motor skills being affected.

Muscles are controlled by electrical signals from the brain. These signals travel by sodium and potassium ions switching places along nerve cells. Shortly before and after death, random electrical signals can still be sent by the brain, or they occur spontaneously in different parts of the nervous system as the sodium and potassium ions settle back into their natural state.
