Eli5: Why do small baby grapes taste sour compared to regular sized grapes?

The ripening process for most fruit produces sugars that either goes to fuel the growing seed when the fruit falls to the ground or to encourage animals to eat it and spread the seeds with their droppings. That process doesn’t occur until the seeds are mature and about ready to go on to the next stage of their existence, so all unripe fruit tastes sour as the sugars haven’t yet been produced.
