The muscle structure in cows is different, and come from different places on the animal, than the muscles in chicken. You don’t eat cow “breast,” and you don’t eat “rib eye” steaks from chickens.

Maybe because of the fat content, because fat slows digestion, thus food with high fat tend to stay longer in the intestine.
