A Mentos mint has an unusual engineered surface. This surface allows saliva to release a lot of mint flavoring, a salling point of the candy. Alas, in a carbonated beverage, this novel surface provides a lot of nucleation sites to start bubbles. As the candy sinks, the bubbles grow at a rapid rate, overflowing the bottle.
