Beer turns bitter the longer it stay in the refrigerator, why is that?

Shelf life, which is how long a beer will still taste like it did when it was made, is dependent on the alcohol content of the beer. So a beer that is under 6% alcohol will normally sour/spoil/skunk in six months or less. A 6% alcohol beer will last up to a year. A beer over 8% can last indefinitely. The thing is that beer can’t get warm and shouldn’t be exposed to light or that will speed the deterioration of the beer.

Most commonly beer turns due to light damaging. The hops reacts to light in the bluer and UV end of the spectrum and will turn. This is the reason beer bottles are almost always brown or green, it helps protect the beer.
