eli5: Why does it feel so euphoric when we drink water during the middle of the night compared to during the day?

Due to our bodies being mostly water we need to make sure we replenish the water we sweat out and use during the day. There are times we do not drink enough or the recommended amount when we are awake for one, but then when you start to wind down for the evening drinking more water is probably not at the top of your list. When you think about it when you wake up in the middle of the night with the mysterious hungry feeling, it probably truly isn’t that you are hungry but actually thirsty, our body feels hunger even though it is due to you being a bit dehydrated. So that water tasting so refreshing is due to the fact that you were really thirsty.
During the day if you get a bit thirsty you have a drink. You usually would do this long before you would become uncomfortable enough that it would wake you up. You also likely end up sleeping with your mouth open so it dries your mouth & throat out & that is what you are relieving more than actual thirst.
