Eli5: Why is the audio on video calls so much clearer than audio on phone calls?

Phone calls still adjust the audio so it will work over old style copper phone lines. .The cut all sounds with a frequency (note) below 500Hz and everything above 2500Hz. Even now that may calls never see an old-style copper phone line, that filtering is still done by both phones.

Video calls, or calls done using programs like Whatsapp or Skype, don’t do this filtering. And now we are moving into voice over 4G , and voice over IP (internet) and wifi, phones aren’t always applying those old filters all the time.
