Less rubber(and other stuff) but the tire has to do the same work so it has to be made out of more expensive rubber(and other stuff).

It is because they are high performance tires. They employ the latest in technology and design. Less rubber? Not likely. They are typically wider than passenger tires. Additionally, they are usually larger diameter, causing them to use more rubber. Finally, the material inside the tire is usually the most expensive part. Kevlar in high performance tires versus steel in passenger tires.

I know mine cost more because of the speed rating.

They are also less common so factories charge more because of the lesser amounts of stock they produce.

Because of the manufacturing process and the limited nature of their production. Also because motor enthusiasts are willing to pay the premium.
