The title is pretty much self explanatory, but in particular i’d like to know how much time it takes to replace the missing blood and how the body compensate for the lack of it

We can safely donate up to a pint (500ml) without any ill effects because it’s a relatively small portion of your blood. Your blood volume will be back to normal within a day or so as your body makes more plasma pretty quickly. It can take several weeks to replace all the red blood cells and other blood cells.
