They’re colour blind!

Most mammals only have two colour receptors. They can see blue/yellow but cannot tell the difference between red/green. Because of this it is not worth being brightly coloured and better to spend the energy somewhere else (for example scent).

Primates evolved a third colour receptor, so we can see more colours and appreciate birds and flowers to some extent.

Birds actually have four colour receptors. So to a bird, you are colour blind and are not fully appreciating their beauty.
