How are flavors like Stinky Socks abled to be emulated in Bean Boozled jellybeans?

Scientists wear socks for a few days, put them In a plastic bag so they get real ripe, then run them through a gas comatagraph (i think, not sure thats the right machine), amd use the chemical signature to create the flavor.
