Two ways:
First: They take a video of your brain’s chemicals, and when they show you something sad, happy, etc and you feel sad or happy they see what parts are active since they show lots of chemicals being released.

Second, old way: They physically look at the areas of the brain damaged from people who survived strokes, car crashes, or otherwise experienced traumatic brain injury. The things they could no longer do or had trouble doing, feeling, thinking, or remembering were associated with the part that was damaged. Therefore since they damaged X part of the brain and they can no longer do Y, then Y is from X.
