Well, you can just fill in the U.S. with squares. Smaller squares = more precision. You can get a fairly good estimate with just a few.

They aren’t ‘easy’ shapes like circles and rectangles, how are irregular shapes like countries’ borders calculated?

Someone (or some computer) draws a polyline around the entire coast and border of a country and closes the polyline off. This creates an area within the polyline boundary that can be calculated.
