Answering the second part about how it targets a specific organ because I have no idea how to ELI5 the first part:

It doesn’t. It goes into your blood and the things that need/want it will use it, everything else ignores it.

Think of it like the line at Yo-Yo-Sushi, lots of things go on the belt and if you want something you take it, but they didn’t add it to the belt just for you.

Similarly there’s messaging systems, sometimes something really needs a specific mineral they can release a hormone, this is basically like you standing up and shouting “I want a salmon roll, if you have one you aren’t eating or see one can you please leave it for me?” Your body uses these sorts of signals so some body parts can hold onto things it doesn’t need now(sugar turned into fat for example) so that when you do need it there’s some available.
These signals also get picked up by your brain and cause cravings(for example if you don’t eat for a while you’ll start really wanting sugary/salty foods a lot more).
