Everything is prone to decay after death. The longer the vegetable is cut from the vine the more it will start to decay.
This is why flash freezing and canning are so good at retaining nututional value. Stop the decay as early and completely as possible

the most of the “nutrients” in vegetables are unstable and just naturally break down over time unless it’s preserved in one of a few specific ways, even if it doesn’t “go bad”.
