How arer vegetable nutrients “lost” over time, like do they evaporate?

Everything is prone to decay after death.  The longer the vegetable is cut from the vine the more it will start to decay.

This is why flash freezing and canning are so good at retaining nututional value.  Stop the decay as early and completely as possible
