Your pulse rate, breathing, and movement are very different while sleeping relative to while you are awake.

It’s indirect. The watch isn’t scanning your brainwaves, but measures pulse, lack of movement (and perhaps some other things) and makes an educated guess.

It can tell the position it’s in whether you are moving, and how you are moving and uses that to guess you are sleeping. A fair number of smartwatches often think you are sleeping if you are just lying in bed reading or watching TV.
