They can be cut using an oiled knife before baking, or sliced post-bake. The oil on the knife prevents the bun from self-sealing when they are squished together to bake.
Post bake, there are special blades instruments, such as T-blades or Guitar blades, that poke into the center buns and slice through. The machines are calibrated so closely, that the center cuts stop a half centimeter from the edge of the middle buns. It’s enough to define the parting line that we see, and there’s not enough warm bread to reseal, hence the raggedy edge we sometimes get when eating hot dogs because we have to tear the bun open.
Basically, for you to do the same, you would need to bake 6 buns in a line. The middle buns, you would have to manually take a thin and sharp bread blade, and insert it length wise. Then, you’d slice to the side stopping *right* before you get to the end of that middle bun.
