How come chocolate chips will melt to mush if I hold them in a fist or leave them in a hot car, but retain their shape when baked in cookies in a hot oven?

Chocolate chips *would* melt in the oven…except they’re surrounded by cookie dough, which keeps them in shape. If you take chocolate chip cookies out of the oven and just barely touch a visible chip, it will immediately turn into a blorp. By the time the cookies have cooled, though, the chips have also cooled and resolidified.
