How come, sometimes, when we are about to sneeze, breath-in-mouth-open-face-cringed and everything, do we suddenly stop and not follow through?

probably because sneezing is generally an unconscious reaction, meaning you cant just make yourself sneeze. sneezing happens when a certain set of conditions occur and the mind goes “okay, lets sneeze” the process of breathing in/crinkling your face on its own might fix one of those conditions, making the sneeze not needed anymore.

It also may be because sneezing requires breathing, something you can actively control. so if you catch yourself focusing on the next sneeze, and maybe inadvertently holding your breathing/interrupting the signals that make your diaphragm move, you mess up the process of the sneeze.
