How do after tastes work?

Why are there some flavors you can taste only after you eat the thing? Shouldn’t I be able to taste it all right away?

Most “tastes” are a combination of different flavors and scents. Some of these are stronger than others and will overpower the rest of the flavor profile.

Some tastes/scents also last longer than others in the mouth.

If you eat something that has both a strong short-lived taste and a longer lasting but weaker taste, the strong one will fade and leave only the longer lasting aftertaste.
