How do automated super market security systems work? What differentiates a product purchased from one stolen (assuming no anti-theft devices on the products)?

Well, aside of on-product chips, they don’t. The large plastic ‘scanners’ at the end of a checkout zone actually don’t do anything, but rather make you fell like they are. This is called ‘Security Theatre’ and just scares the thief away before they think about stealing.
