Think of the stuff inside as a lot of tiny springs, or even sponges. If you sqish a sponge, it will slowly take it’s former shape.
When something stays squished, it usually means that something has permanently bent or broken. Permanent bending, of metal eg, occurs when the force exerted was exceeding a certain threshold. I’m sure if you put enough force onto a puffy jacket it would permanently be squished, but probably you would see a lot of other damage as well.
