how do bugs know you’re about to capture or kill them? They move faster than usual.

They sense your approach and try to escape. In most cases they simply see you, with their eyes, getting closer and move away as to not be eaten/captured. I’m not an expert, but I’m sure there are some insects can use other senses to detect you. But bottom line is, like with most other animals, they just notice you and are scared and run away.
