How do coffee percolators work? and how does the water get forced up the tube?

as the water boils in the lower part, bubbles form. those bubbles rise up the tube, and force water along with them.

(For Moka pot not percolator) Heat from your stove creates a pressure system in the enclosed water area of the percolators (the bottom half) by evaporating the water. The Vaporous water pushes down on the liquid water as it is also expanding from heat which in turn tries to find the lowest pressure system. the water finds its way through the stem and filters through the coffee up through a secondary stem and into the “made” coffee area.
