because the knives rattle around in the dishwasher and beat up against whatever else the knives are next to like ceramic plates or metal cutlery. It’s the equivalent of beating your knives against ceramic dishes and metal forks.

Dishwasher detergent contains a fine abrasive. Food particles also create abrasive material as they get shot around the machine in the water jet.

The result is that you are (ever so gently) slightly wet media blasting everything in the machine. Sharp kitchen knives have edges that can be only a handful of atoms thick. That’s real easy to blunt and round over. (which is also why you should use a chef’s steel every time you pull the knife out of the block and frequently during use)
