Soil is surprisingly porous when its not waterlogged, and underground critters are very well adapted to being efficient with acquiring and conserving oxygen.

Soil isn’t 100% solid, there are a lot of voids between all the tiny little soil particles that just have air in them. This is also why soil can “fill up” with water when it rains, the water can fill in those air voids between all the tiny little grains of sand and silt and roots.

Plus, moles are digging tunnels that created plenty of air gaps.
