When music is recorded in a professional setup, each instrument is recorded separately. In modern terms, you will have separate data files that contain the input from the instrument being recorded. You’ll have a guitar only track, a drums only track…etc etc. Before the widespread use of computers in recording, this may have been done on separate tape reels. Using these separate tracks, a producer can remix the song in a variety of ways.
