How do people who are paralysed survive?

So saying you are paralysed from the neck down, how do all of the organs still work and why?

Most organs generally don’t need any intervention from the nervous system, they function on their own. Even the heart beats to a self-generated rhythm. The notable exception are lungs which need to be driven from the brain stem, but that’s located still above the neck, so even if the person is paralyzed from the neck down they can still breathe.
