How do plastic containers and bags keep things like bread soft even if they were previous dry/hard?

What is it about plastic that prevents dryness or makes things like stale bread soft as opposed to other containers like glass or cloth?

It mostly prevents air from coming in contact with the bread, but a glass container with a good lid achieves the same effect.

The containers block moisture from escaping the bread. A glass container would work but costs significantly more to produce. Would kind of be pointless if the container costs more then the product it preserves.

to iterate on the “if they were previously dry/hard”-part. i suppose you refer to fresh bread that is crunchy. that is only dry on the outside, as it is relatively fresh from the oven, but it still has internal moisture. it gets soft, when the internal moisture spreads outwards.
