How do portable electronic devices not get some sort of overload when you leave them charging/plugged in past a full charge?

Any correctly designed device to charge batteries vill monitor the changing and stop it before they are overcharged.
You not connect the batteries directly to an external power source but have control chips in between. If you connect directly the control electronics is in the external device.
