The croupier at a roulette table is usually quite experienced and is able to memorize who puts down what bet just by looking over the table. There is usually just a few active gamblers at each table so it is not very hard and they often needs help from the croupier at placing the bets. It is also common to help the croupier by announcing your bet and even wait for a confirmation from them. It can remind a lot of an experienced bartender who might be taking orders from customers while simultaniously mixing drinks and taking payment from others. It is a skill that can be mastered. And of course no croupier is perfect and may occationally get things wrong. The gamblers will try to help out when they see mistakes and if there are disputes the casono have video of the table. At high stakes tables or busy tables there may also be others helping out either at the table or watching the cameras.
