You know when apple releases the new iOS updates every year how do they update it on the phones that aren’t sold and just sitting in the back.

When one of the phones you speak of is turned on, it will boot whatever version iOS is installed. Should the device find a working internet connection, it will then search to see if there is an update and proceed in doing so. It’s just part of the firm ware, in its’ nature if you will, to perform auto-updates when an internet connection is available. I would assume that it could update through iTunes once connected to a computer hosting such software and with an internet connection.
Otherwise, it’s not like they just update them in the box while they wait to be sold LOL The updates generally do not take very long; we’re talking relatively basic operating system size here. It’s nothing like full blown MacOS or even Windows. Same with Android OS’s even; they are merely based off Linux, which is of itself even more simplified than the aforementioned OS’s, but I digress…
