How do TVs know what subtitles to display when you’re watching cable TV?

The TV signal contains more “picture” than the TV shows. On older TVs you could adjust the picture down to show the hidden data at the top. The data can contain things like encoded text. You can’t read it directly, but your TV can decode it. When you turn on the subtitle option the TV decodess and displays the text.
