How do unions work? How did they get in power and give us rights?

Unions are just that. Collective power of people. You negotiate with 1 to represent 10, 100, 10,000 whatever the collective is. So naturally you have power and ability to shut down the operations. So you have leverage when negotiating and better worker rights were earned that way. This was during/after Marx (communism) published his works on collective bargaining of the people. That’s why ignorant ppl hear unions and think communism.
