how do we get wood that isn’t sappy?

Why is some wood sappy when cut, but plenty of wood isn’t? Is it by type of tree or how we process it?

In addition to the great answer already given.

Most of the sap is in the outer layers of the tree where the bark is. That is the growing wood, the heart wood in the middle of the tree is where most lumber is harvested from.

Most wood is sappy when cut. It’s left to dry after cutting before processing so the sap dries out. Sap is mostly water so it just evaporates out of the wood.
