how do we get wood that isn’t sappy?

Why is some wood sappy when cut, but plenty of wood isn’t? Is it by type of tree or how we process it?

In addition to the great answer already given.

Most of the sap is in the outer layers of the tree where the bark is. That is the growing wood, the heart wood in the middle of the tree is where most lumber is harvested from.
