Your skin is stretchable, but that is not how we grow. We are mostly made out of cells, which multiply, as long as we live. While you are growing, your cells multiply faster to not only replace dying cells, but become more. So for example your nose goes from billions of cells to tens of billions of cells. The other part is “hard” material like cartilage and bones. They consist of cells that enriched themselves in minerals and then fused to the bone to grow it. Basically all of your body is cells, they just specialize given their task.
