how do we know what ancient creatures skin, color, texture, fur etc looked like just from fossils and bones?

Fossilized hair and skin *has* been found. A good example is a mammoth named Yuka, which was found with both skin and hair.
For feathered animals, the color can be determined from the shape of the melanosomes.
