How do they keep it fair when it comes to ping? Many world championships are happening remote now, though how would thry maintain a low ping for both countries playing?

It’s part pf the sport, much like weather and “home field advantage” in real sports. The organizers do their best to account for potential issues, but in the end there are some things that just can’t be controlled

It depends and is down to the organizers for how they organize the specific event. It is usually possible to chose between different servers which gives the different players different amounts of latency. It is possible to have the players vote on which server to play on or they can alternate the servers between matches. The first option will often result in both having bad latency while the later option might give some players a home advantage for important matches.
